Although no longer an observant religious person, I enjoy taking the seasonal opportunity of Lent to make some unusual / conceptual iterations on the theme of fish sandwiches each Friday. This week, I took inspiration from the Wigan kebab. Norwegian cod and gold potatoes in caramelized leek and black pepper gravy, encased in rosemary & thyme hot water pastry, topped with mushy peas and served on a fresh baked roll with malt vinegar on the side. It was delicious, although if the point of meatless Friday is meant to be "pious sacrifice", this surely doesn't fit the bill.
