Be careful, it says “blade tenderized”. I’m pretty sure that can introduce bacteria into the meat, so you need to cook it at least medium.

I lean steatosis based on the pocketing/uneven distribution of the fat ribbons but if you can get a close up shot we can get a better look at coloring which would help a lot.
