As a heads up, if you can get real palm sugar (often called jaggery, but a lot of places sell raw/crude cane sugar in similar pucks under that name; in any case it’s usually sold as solid hershey kiss-looking pucks that can be grated, chopped fine, or melted into a syrup), you may love what it does in place of the sugar.
