This time I had some leftover steak from the carne asada tacos I made for dinner last night, so today I get to have a steak salad:
150g flap steak
40g premade guac mixed with vinegar and lime juice to make into a thick salad dressing-like consistency
20g tortilla chips crumbled to give some crunch
Fresh tomatoes
Quick-pickled red onions
Fresh chilies
Mixed salad leaves plus a good handful of coriander (cilantro) leaves
Sea salt and black pepper

And a cup of mango ice tea-flavoured cordial (sugar free)!

I prefer to layer up my salads and then mix as I'm eating, but with the guacamole 'dressing' it would work really well to shake before eating as it coats the leaves nicely once you mix it 🥑
