A few days ago, I made a thread asking what to do with some ribs that my wife kinda messed up.

So I took some of your advice and cooked the ribs in the crock pot. I made some cooking liquid with chicken broth, onions, a couple guajillo peppers, sauteed garlic and ginger, cumin, Mexican oregano sprigs, half an orange, salt and pepper and let it run for 8 hrs.
Boy was I rewarded! The BBQ sauce they already had added sweetness, I got some nice savory pork that is still tender but has some tooth to it.
So I can make pulled pork sandwiches or carnitas, but tonight, I present to you:
BBQ pork rib birria tacos!

Thanks to all for the ideas. They are delicious. And to those who said they were trash, I'm pleased to report with a full belly and happy family, that you were incorrect.

    In case anyone is wondering, I did save the crock pot cooking liquid as a dipping sauce, but that’s not very good. Too salty and the flavors aren’t great, probably from cooking so long.

    But that’s ok, the tacos are great.
