    If this is a lacto ferment done correctly the ballooning is normal. You just have to open the bag and reseal periodically so it doesn’t explode.

    Is there anything in it that is likely to cause botulinum? As mentioned proper lacto ferment will do this. Everyone got a hard on doing ferments in bags when noma released their book.

    Had a pack of sirloins do this. I told my coworker to throw them but he had to open one and sneak a sniff before doing so 💀 I love seeing “instant regret” sometimes.
