My blood sugar has been spiking and then going hypoglycemic, although I'm not diagnosed as diabetic (yet, hopefully not ever🤞). In addition to balancing calories, I'm attempting to keep my blood sugar more even. Thus today's shift away from my usual oatbran with fruit, stevia, and protein powder to a more savory option. It was delicious! Time will tell if it as equally satieting.
1 egg, 2% greek yogurt, ajvar (I'm obsessed), cannelini beans, whole wheat toast, drizzle of olive oil, herbs, and Lawry's Seasonal Salt (not listed in recipe image).
