First post here. Been vegan for a few days now and man am I loving the cooking experience! It's making me a better chef and I'm enjoying experimenting with foods. Here is the recipe for these vegan gyros I made last night:
Need:
- Vegan gyro bread (I bought mine at a local international farmer's market)
- Hummus
- Spinach
- Pickled red onion
- Oyster mushrooms
- Vegan Worcestershire sauce
- Spices: Salt, Ground coriander, cayenne, garlic powder, ancho chile powder, white pepper, sugar
What to do:
- Wash your oyster mushrooms and pull them apart into strips with your hands, kind of shredding them.
- Add olive oil into a pan on medium heat and add your mushrooms. Give them a good stir to let them toast a bit.
- Add in your spices, excluding the sugar. Season with your heart!! I like mine very salty and spicy. Stir so that everything is coated.
- Add in Worcestershire sauce. Measure with your heart. Let this simmer down for a while before adding a pinch of sugar for some sweetness.
- Once the liquid is gone and the mushrooms have crisped up a bit, assemble your gyros in this order: hummus, spinach, mushrooms, pickled red onion.
These are so good and greasy and salty while also being super filling and satisfying. I had mine with rice but use whatever side you like!!

Instead of or in addition to hummus, you might try tahini dressing and red hot sauce. It’s an epic combination.
