For the Dough:

  • (115g) vegan unsalted butter, melted
  • (112g) brown sugar
  • 3 tablespoons sugar
  • 1 egg (bobs redmill egg replacement)
  • 1/2 teaspoon vanilla extract
  • (167g) all-purpose flour (sifted)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

For the Filling:

  • one caramel candy (smart sweets) or your choice of caramel filling
