After sitting in my fridge for about 3 weeks, my preserved lemons are finally ready to use. So, the first thing that I made with them was this preserved lemon homos. I just started out by blending my chickpeas, then adding garlic cloves, the preserved lemon pieces, tahini, then some of the preserved lemon juice and regular lemon juice, salt, and ice water. Then, I blended until it was super smooth and creamy. I scraped down the food processor a few times, and that’s about it. I always top my hummus with olive oil and I like topping this one with smoked paprika because the lemon paprika combo is really good. The preserved lemons were definitely worth making and I will be using them in many recipes to come.

I am already having so much fun using these preserved lemons. I shared how to make them a few videos back and the process is actually super quick and easy! It’s just that they have to sit a few weeks before they’re ready. I highly recommend making your own, they’re so versatile and I’ll be sharing lots more recipes using them!
Ingredients:
1 540ml (19oz) can chickpeas, drained and rinsed (or cook our own, and measure out 1 1/3 cups of cooked chickpeas)
2 cloves garlic, peeled
1/3 cup tahini
1/4 of a preserved lemon, roughly chopped (reduce to 1/8 if you want it less strong)
1 tbsp preserved lemon juice
1 tbsp fresh lemon juice
1 tsp salt
3-5 tbsps ice water
1. Pulse chickpeas in the food processor first. Then add the rest of the ingredients, starting with 3 tbsps of water, and blend.
2. Scrape down the sides of the food processor and blend until smooth and creamy, adding more water as needed to reach your desired consistency.
3. Taste, adjust salt or lemon juice if needed and serve. Top with olive oil and smoked paprika. Enjoy!
