    Oh for tacos the bottom one but in general, the shockingly well marbled top one.

    Plenty of striation in the bottom one and less fat… I’d go with the bottom one for the higher meat ratio. If you’re doing tacos it’s gonna be a slower cook anyway.

    Anyway. Top for eating as is. Bottom to marinate and make tacos.

    Wagu is such a scam term. Seems to be no standard for it in the US. Top looks like wagu, bottom not so much.

    Top looks like steatosis. Bottom looks healthy. Fat does not always mean marbled. The fat from steatosis is gristly. Please correct me if I’m wrong.
