    Report his ass to health department. Document and take pictures of anything that you can. If the owner tries any shit, make sure he does some of it via text so you have more paper trails.

    Like sure you can leave, but this behavior doesnt stop. And if no one ever reports it or outs it to the public then…it keeps going

    I’m the opposite. When I find spoiled food or prep in my kitchen it *infuriates* me. Like, how many of you saw this and didn’t do *anything* about it?

    Like fuck guys, if you find something bad, bomb it and write it on the waste sheet so I know about it. Don’t leave it there, and don’t serve it. Bomb it.

    Also, I have a rule: no one will ever get in trouble for writing something on the waste sheet, not matter what. If you throw away good food, that is a training issue and its on me, not you. If you throw away bad food, *thank you.*

    Edit: For the record, I understand why you guys might not want to throw something away. I’ve had a lot of people that will leave stuff on the shelf for me to throw away, because they don’t want to get in trouble. Like, they will skip FIFO procedures because they are not sure, and let me handle it. Which, is fair. A lot of us have had Chef’s bitch at us for bombing food.

    That said, for me, and many others, if you feel like something is bad enough to throw away, I trust you. Just, go for it, do the right thing.

    In an open bag, on the ground. Fuck. Think about how many times someone’s shoe has kicked up a drop of floor water on the lettuce. Look at all your toe kicks and lo-boys for long enough and you’ll realize the water on the floor cakes everything 1-9 inches up all the walls slowly over time from people scuffling their feet.

    Please call the health department and inform them. It’ll save a local population of people from getting sick, you’d be a hero, and if your establishment doesn’t agree with that, burn it down, burn it all down. All over a bag of shit lettuce and accountability.

    Edit: in this case you’re literally better off selling food from the compost bin. Like actually.

    Throw it away. If he fires you then you have a lawsuit. Call your local newspaper and the health inspector. It’s one thing to have expired food in the walk in, we all forget stuff in there sometimes and it gets tucked away until we find it a few days too late. Intentionally using expired and clearly “gone bad” products should be criminal. Sure, if you have a wheel of cheese thats past it’s expiration date but still not blue, maybe it’s okay. But that lettuce is clearly starting to rot.

    This looks exactly like the walk-in when I worked at Arby’s. Was trained to use stuff unless there was visible mold- but if it was rotting it was free game. Absolutely disgusting but manager didn’t hover fortunately so I still threw it away if it was like that
