Preheat dutch oven at 500 F
Lower temp to 450 F
20 minutes covered
10 minutes uncovered

    It looks really good – please may I ask – do you mean 75% hydration excluding or including the starter?

    When you say uncovered 20 min rack…. Do you mean you remove from DO and place directly on rack? Thank you!

  5. I’m brand new to SD. I’m still working on a starter so I apologize if this is a dumb question. Is 75% hydration just water? Is that about 337g if it’s 75% of 450g?

    Also how many quarts is your Dutch oven? Is it cast iron without enamel?
