Looks great! Just FYI Maldon sea salt is more of a finishing salt than a salt to use when cooking. At least that’s what I’ve always been told.

Steak looks good. I’d personally like a bit more maillard, but it’s cooked exactly where I like it.
The fries look like they were slow fried in grease for a day, and are now just sticks of grease. Not appetizing at all. So shiny!
I also don’t love fries with steak anyway. Give me a baked or mashed potato, I’m in.
All in all, I think you did well and I would eat this, even your grease sticks.

So, I’m no professional, but I like to sear steaks in peanut oil or grapeseed oil. Higher smoking point. You can get the pan a bit hotter and get a better sear. Olive oil has a low smoking point. Looks great, though.

That kind of salt is generally a finishing salt. You sprinkle it on after plating, it’s not really for seasoning before cooking.
