I’ve got pasta, pasta sauce, beans, rice, eggs, and can probably find or get ahold of some vegetables and any other ingredients, I’ve got spices galore. I’m just struggling to think of a meal to make that will stretch this chicken maybe a week.

Chicken adobo and rice, rice bean and chicken Burritos, chicken cacciatore
Chicken tacos,chicken soup, chicken enchiladas, chicken sandwich
Chicken fried rice seems to be the most straightforward
Sheet pan with potatoes, sweet potatoes, and a red onion. Toss the veggies in one tbsp of brown mustard and 3/4 cup chicken broth. Rub the skin of the chicken (washed and patted dry) with olive oil. Sprinkle paprika and bake for 55 min at 350
Baked chicken
Bbq chicken in a crockpot add onions to the bottom and extra bbq sauce. Take out and broil on a sheet pan to make it seem grilled and get crispy. Baked potatoes/ scalloped potatoes/ mashed, and whatever vegetable you want
You could do foil packets. Put chicken, cooked rice, veggies, close up the foil & bake. Chicken, lemon juice, garlic, s&p, parsley. Pop it in the oven. Side of rice and veg.
Cook them for 20 mins at 350 covered in foil, then transfer them to a pot with rice and beans and sazon and cook in oven for another 25 at 350
Whatever you do, brine them!! The flavor seasoning is nice, but a brine does so much.
Literally drizzle some oil on them and shove them in a hot oven, either in a cast iron skillet or a baking dish at around 400°F
Bake them. Shred the meat into a nice chicken salad. Sandwiches for days.
You can shred them into anything. I use them to make chicken casserole, or Chicken pot pie. If I bake them I seperate the leg from the thigh portion and it makes more servings.
They’re already seasoned, so you could bake them or air fry them, serve with rice pilaf cooked with baby peas. You could also cook them in a skillet with Barbeque sauce, or get some stuffing mix , prepare and lay them on top of a mound (rib side down) and cook on parchment paper. Chicken Paprikash is a very good dish cooked in a deep skillet with butter, onions, lots of paprika (smoked is best) and thinlysliced red bell peppers. You may add broth and tomato pasta to flour for the sauce.
Cook on medium 45 minutes, or until leg moves easily from thigh finish with sour cream
I pull off the skin and put them in the pressure cooker for shredded chicken but cs. Also slow east the at 220 or do for hours and get amazing pulled chicken too
I use it to make a riff on Cafe Zuni’s most excellent roast chicken with bread salad. I’ll link ATK’s method, but her are my cheaper by a lot subs-
I use white wine vinegar instead of champagne vinegar
Dried craisins or raisins instead of currants
Boxed turkey or chicken stuffing- for the expensive craft bread croutons they make. Unless I have a stale baguette or something.
Chicken quarters instead of whole roast chicken
Amy lettuce I have in fridge for salad, although I do like arugula amd usually have that on hand a lot.
My version turns out fantastic and is my favorite and probably last meal before dying meal.

Salt all sides well- but pepper and garlic and or paprika are all optional. Bake it at 450 for 45 minutes to an hour and go put on 2 episodes of your favorite tv show you’ve been meaning to catch up on, or rewatch…it’s probably re-watch, let’s be honest.
Boom. Roasted chicken.
Serve with a box of Stove top and some frozen veggies or countless other applications.
