Absolutely Delectable Vegetable Greek Salad is all about two things, the dressing and the marinade time. This is one of our very favorite salads. One super handy thing about this salad is it stays good a very long time. We’ve had it stay good up to two weeks before. This is because of all the citrus and vinegar in the dressing. I like to make this salad up in large batches, store half in a jar for the family to eat, and the other half in serving-size jars for my husband to take to work. He always comments nightly about how “good that salad was” when he comes home at night!

That looks like an amazing summer time salad that I will make! Had a thought this morning for you….where i live at the end of summer they have a community based "supper" put on by the local farmers that features dishes made from their farms. Produce and livestock. They charge a pretty hefty ticket price but it is so worth it and is always sold out every year. They also get good business contacts this way too. It helps them throughout the year to sell produce and livestock. I wonder if you could do thus in your area or at least put your thinking cap on to glean ideas…. I think so many people would love to have your food and maybe even just a tour of your farm / Homestead.
I can't wait to make this! I love how this recipe uses a lot of shelf stable pantry items that one tends to have on hand, along with a couple of fresh ingredients. I can't wait to experiment with the different veggie combos. I wonder if grated beets would work? Maybe a golden one? Do you ever top your green salads with this, or how else do you eat it?
I'm so excited for this series. I've never really made much Greek food, but I love it, and I've never had Indian food so I'm really excited to learn some recipes.
