
Ingredients (in grams):
-300g zucchini (about 2 medium)
-1 egg (50g)
-40g chickpea flour (or almond flour for low carb)
-15g grated Parmesan or nutritional yeast (optional)
-1 clove garlic (minced, ~5g)
-Salt & pepper to taste
-Oil for frying (about 2 tbsp / 30g)
Instructions:
1.Grate zucchini and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess water using a clean cloth or paper towel.
2.In a bowl, mix zucchini with egg, flour, garlic,
and optional cheese. Season with salt and
pepper.
3.Heat a non-stick pan over medium heat with
a little oil.
4.Scoop small mounds of batter and flatten into fritters in the pan.
5.Cook for 2–3 minutes per side, until golden and crispy.
6.Drain on paper towels and serve hot.
Serving Suggestions:
Dip in Greek yogurt or hummus.
Add a poached egg on top for a full meal.
Pack in lunchboxes as a healthy snack.
