

My first attempt at sourdough!
200g leaven, 700g warm water, 1000g unbleached all-purpose flour, 30g salt
Loosely mixed then rested 20min, mixed again for 1-2 minutes then covered and let rise for 30 minutes. Divided dough into two balls.
Did one stretch and fold on all four sides. Then put into fridge because it was late.
Next morning did 2 more stretch and folds with little over an hour rise between them. Put back into fridge.
Originally planned to bake it that evening but minor emergency came up and stayed in fridge overnight.
Next morning let sit on counter ~45 min while oven and Dutch oven preheated to 500F.
Baked for 20 min with lid on then threw in one ice cube and baked 20 minutes with lid off.
Cooled on counter for 25 minutes.
I'm pretty happy with how it turned out but I would love some feedback on how to improve for the future!
