The only two questions that remain: 1. What should be the inaugural cook? 2. Should I prepare for a black roof / railing?

Inaugural cook I has to be chicken wings. Play with it, and smoke em. Then turn up high to get some nice crispy skin. Not sure if black roof and railing gonna happen. My house is weird, the second story comes out over part of the drive way and I cook under it. So far no black smoke spots and I smoke twice a week. Then again it’s a bit higher up. GLHF

If you are new to smoking do something pork. Whether ribs, or a loin, or a shoulder. This is the advice I was given because pork is cheap and if you mess it up too bad you can always save it in the oven. Lol.
Just make sure you cut off the membrane first otherwise you will end up with tough ribs!

I wouldn’t do any unattended cooks under an overhang that is attached to my house. If the grill goes up in flames, your house could too.
