Oh man I love this, I usually omit the bacon and add some goat cheese and balsamic at the end, but an apple and onion stir fry is top tier.

We make this but with spicy Italian sausage instead of bacon. So good!

I’d tweak it a bit, caramelize those onions down in the bacon grease and peal the apples and add them in at the end with the cut up bacon with a dash of brown sugar and a pinch of cinnamon and clove. It could work

I’ve made something with chicken, bacon, apples, grapes, almonds, brown sugar, apple pie spice, lemon, and vanilla extracts, and maple syrup, that this vaguely reminds me of.

If you put this mixture into mac and cheese it is so fucking good.
I had it at Michigan State in the dorms 12 years ago, my first year as a freshman and i was like “wtf is all this in the mac n cheese, apples and onions?” And i was blown away. Idk if it has a name but because I’ve only ever had it at MSU dorms my family calls it Spartan Mac

Throw that in a pie crust, and it’s similar to a 18th century homestead recipe. Just add potatoes and some mushroom ketchup. Though I guess since you have bacon in yours you could skip the umami boost from the mushroom ketchup

Scramble some eggs, add fried potatoes, throw it all in a tortilla with yummy sauce and crisp it closed. Boom, my all time favorite breakfast burrito. I also prefer a mix of spicy and sweet peppers but that’s just me being extra.
Fried apples is the secret ingredient. Extra sweaty onions tie it all together!

This was in the Little House on the Prairie cookbook I had as a kid and I was obsessed with it (going to Laura Ingall Wilder Days every year helped too 😂)

There’s a local restaurant that does “german fries” that are this but sub roasted potato wedges for the apple and add a sprinkle of chives after. So good. I’ll have to try the apples .
