Today I’m thrilled to share a simple yet scrumptious recipe for white sauce pasta made without onion, garlic, oil or maida. This recipe is a healthier take on the classic dish, keeping it light and organic while ensuring it retains its rich and creamy flavor. My inspiration for this dish comes from my husband, a scientist who values organic chemical-free food. He always prefers meals that are wholesome, nutritious, and free from refined flour. So, I carefully craft this breakfast recipes to be as healthy as possible. While traditional white sauce pasta includes ingredients like onion, garlic, and refined flour, today’s version will be different. It will be made using wheat pasta, fresh vegetables, aromatic spices, and just a small amount of butter to enrich the flavor. So, first I melt a small amount of butter in a large bowl to give the dish a delightful aroma and richness. Next, I add chopped vegetables, allowing them to cook gently while retaining their nutrients. Since this recipe is free from onion and garlic, I include ginger paste which offers warmth and depth of flavor. To season the vegetables, I add salt and mild chili powder to balance the spice and enhance the dish’s color. Now comes the secret ingredients, chicken tandoori masala. After removing the lid, I directly add raw wheat pasta, ensuring that it absorbs the flavors while cooking perfectly. You can use any type of pasta you prefer. However, I opt for ata pasta to keep this dish wholesome and nutri nutritious. I give everything a final mix, allowing the pasta to cook to perfection. For an extra burst of aroma and flavor, I sprinkle more pasta masala and chicken tandoori masala on top along with another touch of butter for richness. Once fully cooked, I garnish the dish with fresh sweet corn and pasta mix. If pasta mix is not available, alternative seasonings like chili flakes, oregano, and black pepper powder work perfectly and beautifully.
