

I took y'all's advice and flipped my Grill Grates over and used the flat side as to avoid the "burnt lines" everyone shredded me for last time haha
Have I redeemed myself? Or is there something I can do better?
131F for 2 hours
3 minute, still sealed, ice water bath
Grill around 550F
Flipped every 20-30 seconds per y'all's recommendation.
I thought it came out great 😃

Looks pretty damn close to perfect for me. The only thing I would say is start sideways on the fat side first to render a bit more. I would not complain and I say you nailed it. Amazing second attempt!
