Salt & Pepper Tofu

  1. ###Ingredients

    * 2 x 280g extra-firm tofu
    * 6 tbsp cornflour
    * 1 tsp salt, ½ tsp white pepper, ½ tsp Chinese five spice
    * 2 red chilies (sliced)
    * 4 garlic cloves (grated)
    * 4 spring onions (white and green parts separated)
    * 2 tbsp maple syrup
    * 2 tbsp sweet chili sauce
    * Vegetable oil (for frying + 1 tbsp for wok)

    ###Instructions

    1. Crisp the Tofu – Tear tofu into chunks. Toss in cornflour, salt, pepper & five spice. Deep-fry in hot oil until golden and crispy. Drain on kitchen paper.
    1. Sizzle the Aromatics – Fry spring onion whites & garlic in a wok with a little oil for 1 min. Add tofu and toss.
    1. Glaze & Finish – Stir together maple syrup & sweet chili. Pour over tofu and toss till glossy. Sprinkle over the spice mix. Serve hot with a garnish of sesame seeds & spring onion greens.
