    If I have some good prawns (especially the pink ones from southern Italy) I plate them raw, a drizzle of oil to make them shine, freshly squeezed lemon and at most a little parsley.

    Or I make a good risotto with shells and heads (after removing the black intestine with a fork I just blend everything and cook in a little of butter, then I filter it out and use as a broth for risotto), lemon zest and I throw the raw shrimps in the latest 3 minutes.

    Sorry, no shrimp with pancetta for me, people in the south of Italy would slap you for that. Shrimps are such a delicate taste that it’s a shame to put a strong and fatty meat above.
