I currently only own the basic Wilton gel colors so am planning on ordering a blue shade to hopefully achieve this.

you can achieve this blue with almost any blue food coloring (that is macaron friendly of course), and only add a couple drops to get a baby blue color.

Google: To create cerulean blue, mix cyan with a little white. If a more aqua tone is preferred, add a dash of yellow. Alternatively, mixing ultramarine blue, white, and a touch of grey can also achieve a similar shade.

I can’t get a pastel blue with the royal blue AmeriColor, even when using just a bit. Get Wedgewood or Sky Blue. Sky blue is bright and may need some adjustment to not be super saturated. With small amounts of pastel blue, they often green a bit after baking (almond flour is not white), so a tiny tiny bit of purple will fix this.
