Thank god for warmer weather and more hours of sun because it makes eating salads all the more enjoyable.
I genuinely just finely dice whatever veg I have on hand, add tuna, add greek yoghurt and try to balance the flavours together.
This girl loves salty, vinegary, tangy flavours and simply adding a bit of honey and balsamic glaze to sweeten it up works a treat.
The crumbled corn cakes are also a great texture additive to combat that soggy salad feel. I would’ve liked to have added a boiled egg for some healthy fats and creaminess mm mm mmmm but alas a trip to the shops is needed.
