Chicken and creamy spinach sauce with Parmesan, roasted zucchini, and buttery mash

OK, OK I know, I’m not the best at roasting things in the oven. For some reason, the zucchini always comes out either raw enough to join a salad or so crispy it identifies as charcoal.
