Not necessarily meal prepping for the week, but wanted to try souper-cubing some Salisbury steak (but in meatball form!), made some mash to go with it, and also made some granola for the next little bit! Bonus cubes from last Thursday: bought some pre-marinated butter chicken (thigh pieces) last week, and added some sauce to stretch it out for some future dinner with rice.
Last 2 photos are of the portions of Salsbury meatballs + butter chicken that went into my stomach instead of the freezer because I was hungry right then lol.

I used almonds, walnuts, hazelnuts, cashews, sunflower seeds, and raisins in mine. The recipes says to mix in any dried fruits at the end after baking, but I actually like to put the raisins in the oven for the last 10 minutes or so to get them a bit toasty and chewy. Also watching them puff up in the oven is fun lol.

Instead of forming the meat into patties, I just made meatballs by roughly shaping them with spoons and throwing them onto the pan in batches. A lot of fat came out of the meat and I ended up adding more flour and more stock to make more gravy – it was probably almost 2 times what was in the recipe, but it was perfect for cooking all the meatballs in and dousing the potatoes!
Butter chicken: I don't have a recipe for the marinade but I imagine it was pretty standard. To make more sauce, I just heated up a little bit of regular tomato sauce (I think it would've had onions and garlic in it?) I had frozen with some butter, added the chicken pieces + marinade I baked in the oven, and then stirred in some whole milk and yogurt (would've used cream if I had any) at the end. The original marinade was pretty flavourful/spicy already so I didn't try to add more spices – I think I just added some salt and sugar at the end to round it out and it worked pretty well!
