    I agree its silly to say they cant get bark but its a bit ironic to bring it up then post a brisket with a bald spot on it.

    Holy Cow is my go to brisket rub. It’s always produced a solid bark and flavor on them.

  4. I mean sure some people are offset purist but I’m all over these grilling, smoking subs and that’s not a common or much agreed on comment (no bark on pellets)

    The fact is that offsets will provide a better result all around at the cost of losing the massive convenience of pellet smokers. I can’t imagine babysitting my offset through the night for a cook, hell I have a hard time justifying it during the day anymore lol

    It’s not bark, it’s smoke flavor that is lesser. It’s there, just not as much.

    Got a couple of briskets the color of coal on a pellet smoker. I thought I’d screwed up til I cut it. 4th of July was never the same!

    Im still chasing that dragon. Want to do it again!
