Cheesy Garlic Butter Mushroom Stuffed Chicken
Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup mushrooms, finely chopped
– 1/2 cup cream cheese, softened
– 1/2 cup shredded mozzarella cheese
– 3 tablespoons butter
– 3 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– Salt and pepper to taste
– 1/4 cup grated Parmesan cheese
– Fresh parsley, for garnish
Directions:
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
2. Carefully slice a pocket into each chicken breast; be sure not to cut all the way through.
3. In a mixing bowl, combine the chopped mushrooms, cream cheese, mozzarella, minced garlic, thyme, parsley, salt, and pepper. Mix until well combined.
4. Stuff each chicken breast with the creamy mushroom mixture, packing it in generously.
5. In a skillet over medium heat, melt the butter. Once hot, sear the stuffed chicken breasts for about 3–4 minutes on each side until golden brown.
6. Transfer the seared chicken to the prepared baking sheet. Sprinkle grated Parmesan cheese on top of each piece for an added layer of flavor.
7. Bake in the preheated oven for 20–25 minutes or until the internal temperature reaches 165°F (75°C). The chicken should be cooked through and juicy.
8. Once done, garnish with fresh parsley before serving to add a pop of color and freshness.
