***Chipotle inspired bowls for dinner***
* **Chipotle honey chicken** – Chicken thighs, honey, 3 chipotle peppers + sauce, s+p, oregano, cumin, fresh garlic, garlic powder, onion powder, avocado oil. Blended together with stick blender + marinated overnight. * **Cilantro lime rice -** After jasmine rice is done cooking, I added a handful of cilantro, juice from 2 juicy limes, and zest from 1. Added salt, butter, and large grated garlic clove to the rice while it cooked. * **Queso green chile dip -** Make a roux, added 1 can of evaporated milk, added sharp cheddar + pepper jack, large spoonful of the chipotle in adobo sauce, 1 can of hot hatch green chiles, s+p. * **Roasted corn salad -** Grilled corn on the cob and cut kernels off. Chopped red bell, jalapeno, onion, and garlic. Cook until softened then add corn. Add s+p and ancho chile powder. Cilantro + fresh lime juice. * **Roasted salsa** – Roma tomatoes, jalapeno, garlic, and onion roasted until blackened. Pulse blended in processor until desired consistency. Seasoned with chicken knorr seasoning. Fresh cilantro and lime juice. * **Pinto beans -** Soaked overnight. Added onion, garlic, cumin, finely chopped jalapeno, and chicken knorr seasoning to beans. Boil until softened. * **Avocado crema -** 2 large avocado, sour cream, s+p, lime juice, and chili powder. Blend in food processor until smooth. * **Shredded lettuce, avocado, tomato, and red onion.** * **Shredded sharp cheddar + pepper jack**
I’ve never had Chipotle in my life so I highly doubt my corn, salsa, queso, etc. taste anything like the restaurant lol. Brought a bag of tortilla chips too.

Blended with stick blender.

* **Sandwiches** – Brioche bread [recipe](https://www.theflavorbender.com/brioche-bread-recipe/). This is my favorite enriched bread recipe and worth the hour it takes to knead in mixer. Keep the vanilla in even if you plan on using it for savory. It’s very little and doesn’t taste like a dessert bread. * Turkey, pepperoni, swiss cheese, homemade mayo, jalapeno chips, and pickles. * **Pasta salad -** Recipe from [Brian Lagerstrom](https://youtu.be/0lQD-SnN57Y?si=3N-NSlzzWSqxb0K1&t=562) – Salami/pepperoni, mozz, olives, pepperoncini, italian dressing, etc. * **Produce** – Mini peppers, apples, banana, grapes, baby carrots, celery, and oranges. * **Lemonade** -** 1 1/4 cups of lemon sugar (sugar with zest from all your lemons, let them sit together overnight), juice from 8 lemons, 5 cups of water. Bring water to barely a boil, take off heat, add lemon sugar, mix until sugar is dissolved completely, strain sugar water to catch zest – discard. Let cool completely before adding lemon juice. * **Mini chocolate cake -** Cake recipe is from [King Arthur. ](https://www.kingarthurbaking.com/recipes/king-arthurs-original-cake-pan-cake-recipe)Made in a 8×8 and cut to fit in a meal prep container. Please make this cake if you like chocolate cake. It’s so good! I was like wtf at first when I saw it contained to no eggs or dairy. Probably my tenth time making it, never fails. Made a small batch of chocolate butter cream to top it.
**I like my lemonade on the tart side. If you find it too tart, just add water until you’re happy with it.
