Sisters Kelly and Kate Latham (Image: NQ) Pairings Wine Bar currently resides at 28 Castlegate and will remain there until the relocation takes place.
Kelly said: “We love our current home but our lease is now up and it feels like the perfect time to expand our offering. A larger premises means we can comfortably welcome in more customers. But our proposed new site also means that we can increase our food offering, and even open up a space for private hire.
“Castlegate has been a wonderful home for us, so when we saw a space on the same street that could offer us the expansion we needed, we knew we had to take it. It’s not confirmed yet, but we’ve submitted our application and now it’s a waiting game.”
The new site is also promising a more enhanced customer experience with a whole new aesthetic that has been carefully crafted by Studio Two Interiors. The new look, the sisters say, gives a clever nod to aviation, and plays on the idea of exploration and journey.
Kate said: “Pairings started as a wine bar, but we’ve really evolved over time. We’re so much more interested in bringing new and delicious flavours to our customers. And exploring the craft involved in each product.

“Our menus have developed and now offer local craft beers, cocktails, interesting soft drinks for those not wanting alcohol, and a complementary food menu full of sharing boards and small plates. Though the new site means we can offer an even wider food offering, which is a great step forward for Pairings.”
