    Looking good. I’ve switched to butcher paper and it’s halfway between foil and nekid. Better bark than foil, and more moist than nekid IMO.

    I don’t wrap ribs. The whole point of wrapping is to speed up the cook. Ribs just don’t take that long and I want all the smoke I can get in that time

    Good lord that is the perfect looking rack of ribs. I’m no wrap as well and my god is it better. What was your rub?
