My back is finally starting to recover from an annual cook we do for a church fair. Two days, five rigs, not sure how many cases of beer, but a lot of happy folks. Glad it is just once a year!

    Do you start fat side down? What side do you finish up? Do you need to turn them so the moist is pointed towards the outside or the left vs the right gets the direct heat from the back?

    Had a biz neighbor with a rig like this. Probably around 16′ long. Did amazing job. Professional catering.

    Hey I’m curious, I was thinking about opening a food truck before my wife passed a few years back. Where in the hell do you find a good wholesale place to get that much meat at affordable prices to make a profit? I have buddy’s that were barely breaking even on their briskets.
