I know it’s an unusual thing here, but you have to try this. Smoked pig ears. Very simple recipe. Clean well. Boil with garlic, pepper, salt, red pepper what have you. About 35-45min. Drain and dry on a rack.Throw on the smoker with your wings. Same temp. Don’t let them dry out, but get a good color. Usually wings and ears are done at the same time. Cut in strips and enjoy. Things to know: it has a crunchy cartilage, it’s super crunchy and good. You don’t like it, just eat around it. It’s even better cold with beer the next day. 3 ears at a Hispanic market cost me 3.5$.
P.s. posting this because Iam tired of your dry brisket, burnt ends and chuck(poor mans brisket) go try something new

BTW, if you ever eat/order “carnitas” at a traditional Mexican restaurant, the likeliness you would get pig ears, snout, or feet mixed in there are high. Some might have already eaten those without knowing.
I’ll pass on the crunchy cartridge. but i definitely appreciate the break from the usual stuff. Is there any way to cook long enough to break down the cartridge, but not be mushy? ive made ramen broth with ears, and theyy were fall apart by the end.
Amazing cut. I ate this growing up. My parents would put them on skewers, grill them over charcoal with vinegar dipping sauce with black pepper, shallots minced garlic and (optional) bird’s eye chilies or a sweet and sour sauce.

This is dope. I just smoked some pork cheeks a few weeks ago found it better than shoulder and maybe better than ribs.
This reminded me of all the country gas stations growing up that had pickled pig’s feet in a giant jar by the cash register. I’m probably not going to be eating any ears anytime soon, but love the gumption OP.

I’ve had smoked jowls but man, I don’t know. We used to give our dog dried pig ears until the little bastard tried to inhale the damn things, and it just smelled really bad.
There’s a very famous place in Jackson, Mississippi that sells pig ear sandwiches til this very day. Big Apple Inn.

Thanks for sharing! My family usually makes these as soy-braised snacks to be eaten cold, but I could totally see the smokiness being a great addition.
