    Looks like a good choice for a quick lunch! Today I had a salad with Trader Joe’s dill dressing and some baked tofu. Simple, cheap, and quick are my favorite lunches too.

    Nice. I’ve been cooking everything in a bowl in the microwave and I can eat all kinds of healthy stuff. Do what you can do. Frozen veggies are so convenient. You can even make scrambled eggs in the microwave. What I’ll usually do is cook ground meat (any kind will do) and veggies together until the meat is done, then add in eggs if I want and cook those. (If the meat isn’t frozen, then you’ll need to thaw the veggies first.) Then add rice and some kind of soup stock, or curry, or sauce and mix it all together. Then there’s only one bowl to clean. It’s saving my life. 😅

    Yum! Way to go! I’d be hungry without a baked potato, sweet potato, beans or some other carb. You can bake potatoes or sweet potatoes in advance, and bring them in to reheat them. Diced up with some dry spices on they’re really good! Cooking at work is a little tough, I’m sure you’ve got this made!

    Mad props to you for overcoming the challenge of break room cooking facilities! Foil pans in a toaster oven and frozen veggies is pure genius, and you’ve got all your nutrients covered. I would totally eat this, it looks yummy.
