





Very solid 1 star in Dijon, run by the Bernard Loiseau (RIP) restaurant group. Great seasonal cooking with good technique from the kitchen. Three course dinner menu was 98 Euros.
First dish were snails covered with discs of parsley gelee, chablis foam, spinach/butter puree, briefly cooked pak choi and Bernard’s famous sweet garlic puree. Very good!
Very nice full flavor lamb (two cuts, nicely cooked), peppermint jus, double shelled peas warmed with spring onions, and a caramelized onion puree.
Great starter of thick green asparagus and white asparagus with chicken jus vinaigrette (not pictured) chopped egg, croutons and a caper asparagus sauce.
Beet amuse with beet foam, trout roe, beet brunoise and beet shaves.
Great cheese plate, included Comté and Brillat-Savarin.
A dessert of strawberries and sablè.
Service was just ok. They took a long time to clear empty plates and seemed overwhelmed.
