   Just educate me a tad. What cut is that? Pork steaks around here come from the shoulder. So is that just a big pork steak or a small shoulder roast?

   But it looks freaking delicious.

    St. Louis folk know. This looks like a boneless pork steak, also known as a coppa. Absolutely the best cut of meat on a pig.
