✨ Ingredients:

1 aubergine (eggplant)
Olive oil
Salt and black pepper
2 tsp harissa paste
3 tbsp yogurt (or dairy-free alternative)
Juice of ½ lime
Fresh coriander
1 tbsp olive oil
1 crushed garlic clove
Pomegranate seeds (for garnish)

✨ Instructions:
1️⃣ Slice the aubergine in half lengthways, score the flesh, drizzle with olive oil, and season. Roast at 200°C for 25 minutes.
2️⃣ Blend yogurt, garlic, coriander, salt, pepper, lime juice, and olive oil to make the zesty herby yogurt.
3️⃣ Mix harissa paste with olive oil to make the harissa drizzle.
4️⃣ Spread the yogurt sauce on a plate, top with roasted aubergine, drizzle with harissa oil, and garnish with pomegranate seeds & fresh coriander. Enjoy!
