Rhubarb upside down cake. Any tips on making it look less vile?

    Rhubarb is kinda sour. It wouldn’t be too much to do a powdered sugar dusting on top. Also why is it green?

    I thought this was some kind of weird pickle sandwich. 🤣

    Maybe sprinkle some chocolate buttons or something. I don’t know how that would taste. 🤷‍♀️

    I’ll bet it tastes good, but you could try riper rhubarb, and maybe macerate it with some sugar before adding it to the cake. It should pull out some moisture, and you could then heat/reduce the remaining juice to use as a syrup for the cake. Alternatively: lightly sugar and brûlée the rhubarb top of the finished cake.

    It can’t look much worse.

  6. Add some sliced strawberry in a pretty pattern on top. If it still looks too vomit-y, dust some icing sugar in top right before serving.

    Macerate and maybe caramelize the rhubarb first?

    If you want to double down, make some whipped cream and put that on top. In time it will collapse and curdle from the acid in the rhubarb. Could be fun.

    Just add some meringue. That’s a popular way to make rhubarb cake where I live. The sour rhubarb works great with the sweet meringue

    Don’t look is the easiest answer, whip cream an easy 2nd. Cinnamon and brown sugar glaze comes in 3rd

    This is why strawberry-rhubarb is such a popular combo. Rhubarb by itself looks like compost.

    Try making it with strawberry and rhubarb! That has always been my favorite pie 🙂 But the whole upside down aspect might affect that.

    Look up making rhubarb crisp – strawberry is almost always paired in for a reason. An easy crisp will even just use strawberry jello powder! At this point – either add fresh strawberries over top OR scrape off as much of the rhubarb as you can without damaging the cake and throw it in a pan with some strawberries and strawberry jello (maybe even a drop or two of red food coloring if you need). This looks bad mostly because the rhubarb is snot green.

  19. Would make some merengue, put some small dollops in a circular pattern all over, and lightly flambé them so they get caramelly 😋
