Man, I don’t have to wonder, when I was managing this little pizza restaurant (artisan crap that was way to expensive) these things just did happen somewhat frequently. It was an old building that was never meant to be a kitchen, yknow. Boom, 50 dollar pie on the floor because the waitress hit the countertop with her hip as she was rounding a corner. One time we had a drink runner dump a pitcher of beer on some dude and his wife, like shit happens.
My way of dealing with things is humor. “The trash can was really hungry what can you do, just don’t tell Steven or he’ll go crawling in after it. Let’s get it remade and go tell the table you were attacked by knife wielding school children or something and we’ll discount it for the wait.”
Then AFTER service. When everyone’s cleaning up. When it’s not a shit show. You take them aside and you talk about what could have been done better and remind them to please ask for help if they need it, were all in it together and there’s no shame in having open communication. If it’s hard to pick up a big cast iron pan from the taller counter, we can have Steven put it on the drink counter instead so it’s easier to grab, that’s no problem, and hey good work, it was busy as hell but we got through it.

Once had a 15 top in the middle of the busiest day of the year. Someone screwed up and half the order went to the wrong table. Had to refire the entire order, which went out fine….until the server dropped it all.
Only sane thing you can do at that point is laugh and refire.

Idk don’t prep over the trash can ? If the restaurant don’t have enough places for you and you are placing people food over the trash can, I’m sure that’s a healthy violation, I blame the owners for not equipping and training their staff they should be fined and probably not allowed to keep open

I did this with a cake when I first started my baking apprenticeship, I was working with that cake decorator that day and she had me move a cake but didn’t show me how to properly lift it and it fell straight in the garbage. I started crying, and she said it wasn’t a special order so we could just remake it.
I was so upset because a guy doing his apprenticeship at another bakery had to pay for a whole tray of turnovers he dropped. Turns out that was against the rules because we were unpaid teenagers and they got blacklisted for that and making the guy wash the owners truck.

Literally have had that convo many times. It helps ZERO to rip them or even discuss it in the moment

Just say hey it’s ok go out let the customer know aye look we were trying to get your food out to you but it was alot and we dropped it on the way so we have to remake it that seems pretty understandable to me. But the real question here is was that a trashcan they sat it on top of?

ive seen this a hundred times and it still makes me sad for her. like others have said its really not the end of the world. but on a bad day that could lead to someone impulsively walking out being all flustered and embarrassed.

FOH mgmt job is to give server credit to comp apps/bevs asap. Chefs job is to be patient and professional while his/her laser eyes melt the server (already engulfed in flames of shame) then laugh over drinks/Red Bulls/ darts when it’s time. Taking turns screaming in the walk in as necessary.

This is a training issue, unless it’s happened before, then it’s a sitting-down issue, unless it’s happened more than once, then it’s an employment issue.
