Purple macarons I took out too early (some still wobbled on their feet)
Pink macarons I baked for longer (so they didn’t wobble on their feet) but the inside has kind of risen off the feet. Have I baked too long?!

What temp are you baking at ? How long for the purple ? The pink ?

When I bake too long, mine pick up a tannish tone at the bottom. These don’t look overbaked. Tops that come off easily is a sign of underbaking. Concave bottoms happen when they haven’t baked enough / too low temp / insulated pans.

I was consistently underbaking and they looked like this (no bottoms, risen top. My tips: -If silicone, add a min or two
-if they wiggle, do another 1.5 minutes
-don’t open the oven to turn them around unless your oven bakes super unevenly – opening makes the temperature sink down majorly which will lead to underbaking or dropping
-I learned I cannot bake macarons on my thinner aluminum pans. Darker, thicker pans work every time if I don’t open the oven until the full 14 minutes is up at 150 C
