Ever feel the need to consume a mountain of potatoes? I gotchu:

550g Spudlite/25% reduced carb potatoes (275cal)
200g frozen garden mix vegetables (56cal)
seasonings of choice (0cal)

Prepare potatoes by poking with a fork multiple times, wrapping in a wet paper towel and microwaving for 12 minutes, flipping halfway. Add veggies straight out of the freezer with seasonings, mash until you have a mountain that no normal person could possible finish in one sitting (unless you have a bottomless stomach like me)
