Looks medium and delicious. Medium rare would be red from top to bottom of the inside of steak. That customer was super picky – this was just barely over to medium.

I too would say it’s closer to medium. But I like my steak from medium rare to medium, so there’s no way I would send this back, it looks delicious imo. I might mention it to the waiter if it was really expensive, more as a heads-up than a complaint though.

Its medium. No red but nice and pink. Medium Rare should have just a bit of red in the middle but still be warm all the way through.

Medium rare has the word rare in it. This means some part, even a very small part MUST be rare.
In the photo above the bottom piece is a nice medium and the slice above it is a little less done
but neither are a perfect medium rare.
In my experience a lot of customers who ask for MR actually want and enjoy a moist Medium.
Anyone who responds with ” I just want it cooked”, is probably OK with medium to medium well.
Most cuts of meat are improved by cooking beyond rare. Tenderloin is probably the best for a rare
doneness . Most other cuts of steak however, improve greatly cooked more than rare.
The connective tissue break sdown, the fat renders and sears becoming savoury from at least a medium treatment.
Blue and rare, while tasting pretty good if cooked on very high heat or charchoal, on the outside, have had no change to the connective tissue and no transfer of flavours to the inside.
You are eating meat only slightly warmer than room temperature. This is not appropriate for Veal, Lamb or of course Pork, although pork and chicken are often criminally overcooked for so called safety reasons.
Also lower end places overcook their meat to keep the bulk of customers satisfied.
Expensive steak houses tend to slightly undercook as a bit of hedge, the meat continues to cook on
the way to the table.

I’m not a chef so I couldn’t tell you exactly but I wouldn’t send it back! I order mine medium and just eat them however they show up as long as they aren’t too rare. I’ve only sent maybe 2 steaks back for being too rare for me in my adult life.

Looks can be misleading sometimes. A thermometer shortly after being pulled is really the only way to know for sure. But this does look closer to medium than med-rare.

That’s pretty damn good looking. The top half looks very good, the bottom half is definitely medium. If you asked for rare then I can definitely see why it was sent back…medium rare I think they’re being a little too critical. The problem with this I see is there’s a chance they cut into the new steak and say it’s too rare 🙄.
