    **Simple Pasta Salad with Roasted Red Pepper and Mozzarella Balls**

    Ingredients:

    • 6 oz pasta (mini penne, or mini bow tie)

    • 1/4 cup roasted red peppers, sliced

    • 1 cup mozzarella balls

    • 4 tablespoons olive oil

    • 2 tbsp white wine vinegar

    • 1 clove garlic, minced

    • Parmesan cheese

    • 3-4 leaves of fresh basil

    • Salt and pepper to taste

    • Garlic powder

    • Tsp of honey

    Instructions:

    1. Cook the Pasta:

    • Cook pasta according to package instructions until al dente.

    • Drain and rinse under cold water to cool.

    2. Prepare the Dressing:

    • In a small bowl, whisk together olive oil, white wine vinegar, garlic, garlic powder, dried oregano, honey, salt, and pepper.

    3. Assemble the Salad:

    • In a large bowl, combine the cooked pasta, roasted red peppers, fresh basil and mozzarella balls

    • Pour the dressing over the salad and toss to coat evenly.

    4. Chill and Serve:

    • Refrigerate for at least 30 minutes to let the flavors meld.
