I bought a single 2.75+ tomahawk… Prime grade, for $12.99lbs from Costco.
Came home, dry brined in Kinder’s Prime Rub, please a bit of extra granulated garlic. This was in back fridge for about 2 hours. Then vacuum sealed with about 1/2 lbs of butter.

Set the Sous Vide for 135f for 3.5 hours… was actually in the bath for 4 hours.

Took out, pat dry, and placed back in the fridge for 2 hours.

Finished in my giant cast iron (sorry, forgot to take a pick of this…. Yes, I missed the money shot).

My wife (not a big eater), eat more than I do and the wanted to know my plans for for the bone.

It was absolutely amazing.

    Fair… but it works with the Kinder’s and I pour the juice over the roasted mushrooms and onions.

    Nowadays I usually do 132 for 2:45 for them, but I started from exactly from your parameters. Only butter, thyme and salt in the bag. I only immerse in icy water for like 15 minutes in the bag and use pepper and garlic powder before the sizzle.
    Sometimes I add MTL steak spice or Keg mix before the iron, but then I hold the salt for the jacuzzi.

    I’m just here reminding people that Costco blade tenderizes their steaks, which makes them poor sous vide candidates because interior can harbor bacteria that got pushed in.

    Also, ribeye 137 to better render the fat.

    Boil your steak in butter, my brother. Any nay sayers can BURN!! (Strain that beef butter juice thru a fine mesh siv then incorporate it into a sauce)

  10. Saw a couple huge tomahawks at Kroger today at a pretty good sale price. But I couldn’t be bothered to find a container or bags big enough for it. 🤷🤣
