Toasted or just plain white bread? Either way I’d smash with a little pepper on there. Lemon zest really is a nice touch too!

Reminds me of a couple of my cherished childhood memories of tasty bread toppings: pimento loaf (that lunch meat that was peppered with sliced olives and pimentos đź«’. And then there was Kraft pimento spread. Cream cheese mixed with pimentos. Both very scrumptious. Definitely, not for everybody. Kind of an acquired taste.

Olives and cream cheese are actually pretty awesome if you’ve never tried it. I make an olive spread/dip with cream cheese, black and green olives, garlic and some other seasoning, and a bit of sour cream. Sooooo good on triscuts
