137 for 45 hours, chilled and then seared over charcoal and hickory. Very tender, moist, still taste like chuck roast but I did enjoy it.

    Looks great.

    We normally make a Ramen broth on the same day i start the chuck. The roast just soaks up that broth like a sponge as soon as it’s dropped in.

    Looks like it’d be gone rather quickly here. My 8 year old will eat it till I make him stop. He is not chunky lol I don’t know where he puts it
