    Looks great to me if you like the “medium” side of medium rare. I prefer the rare side, but the sear and overall internal temp looks great and consistent, without drying it out. Of course, with that kind of marbling, it’s going to be hard to dry that sucker out.

    In the oven @250 until internal temp hit 125. Into the freezer for 25 min. Sear each side for 45 seconds. Baste with butter, garlic and rosemary while standing on the fat side for 45 seconds. Picture makes it look more “done” than it was. Would say perfect medium-rare. Super juicy and tender.
