Recipe from Milk Bar – Christina Tosi

I'd love to improve them. They had a good crust sound and blistering!

    That’s an excellent first try!
So I worked in a bakery in college years ago and one of the things I always remember about making croissants is that when you’re folding the butter into your dough. Make sure that you chill it or regularly so that the butter never has an opportunity to melt and becomes its own thin layers as you fold it.
I would typically end up making a batch and folding it three or four times and putting it back in the freezer grabbing the the next one from the freezer adding butter to it folding It repeatedly putting it back in the freezer rinse and repeat for all of the different batches that we were making that evening.
That’s the only tip I can offer, your croissants look great very nice job 😊

I think you did a fine job! Those are “pat on the back” worthy!

If I may be so blunt, what you have there are crescent shaped brioche. They are far from fabulous as some have been so bold to claim, but you are fantastic for trying. I say this to avoid misleading you about where the bar is. I only wish I had a picture of my disastrous first attempt to be able to commiserate with you. Keep it up though, and you’ll get there with practice; they’re shaped great.
